Let’s go for a drive! Destination: irrelevant!

That was our big plan for last night and ended up at Super Target to pick up some groceries – glamorous, I know. We couldn’t decide between Indian and Thai for dinner, and with the flip of a coin, it was Thai.
This morning we went to the Ybor market and picked up produce
and rosemary bread which makes my day!
We may have a little bread tonight, but we’re going heavy on the veggies since I ate 2.5 donuts from Nicola’s Donuts yesterday. YES!!! 2.5!!! And those things are monstrous. I feel like I need to go to confession or something… and the gym.
I’m not even a big donut fan in general, but these are like, designer donuts and they’re fantastic.
I wanna know how many calories/sugars that equaled out to, but maybe it’s best I don’t? Actually, I’m sure it’s best I don’t.



Creamy Cheese and Mac

And I didn’t even have to steal the recipe from anyone on Pinterest! 😉 This is perfect if you’re the one in the relationship who has been skipping out on the gym and partaking in the “no carb left behind” diet. My other half has been disciplined and diligent and I’ve been all like, “Yes I want to eat raw cookie dough for dinner!”

So if you’ve sworn to change your ways starting tomorrow, here’s to one more day of cheesy deliciousness. Since it’s far too hot to be hovering over a stove, it’s a good thing this will only take you about 8 minutes to prep. It’s a small price to pay for the creamiest, tastiest, healthiest variation of an old fashioned “homey” favorite.
What you need:
1/2 c pasta of choice (I’d use something big and hole-y)
1 T whole wheat flour (regular works fine, too)
3 T olive oil
1/2 c 2% milk
1/2 c water
handfull of cheese of choice (personally, I think the bagged shredded cheeses work just great – I used the “Mexican” shredded blend here. It has monterray jack, sharp cheddar, and something else I can’t remember)
1/2 t salt
1/4 t black pepper
1/4 t smoked paprika

1. Make pasta as usual.

2. While that’s cooking, make your cheese sauce: Put medium size pot over medium-low heat. Add your olive oil and remove from heat. Stir in flour and whisk until combined and golden. It should have a relatively thin consistency, so if it clumps up on you, add a little more oil. Put back on burner and immediately turn the heat down to low.

3. Add the milk and whisk constantly until it thickens. This happens FAST, so pay attention! (Mine got really thick and was too sticky to manage, so I added the water to thin it out. You may not need it.) The consistency here should also be thin and creamy, not thick. It’s too thick if it starts to look like mashed potatoes. (Random, but that’s what mine started to look like, haha.) Stir in cheese until melted and season with salt, pepper, and paprika to taste.

4. Remove pasta from heat and strain. Put pasta in pot with cheese sauce and stir until combined. Add shredded spinach until wilted and tell everyone you’re eating a healthy well-balanced meal. 🙂
Bring it to the pool or stay inside away from this sweltering, sticky, exhausting heat! And we have about 90% humidity…

What’s the best thing to do on a painfully hot day? Even our pools are warm enough to be bath water, so not very refreshing. Ice cream melts in seconds, I felt like I needed to shower just from walking to the mailbox, and I’m pretty sure my shoulders burned just from standing in the Target parking lot unloading the cart!

Ahhh, it’s Friday…

Check out this avocado! Isn’t it perfect? It was soo creamy and bright and flavorful…
This was a good idea:
Potato bread bun, 85% lean hormone-free ground beef seasoned only with salt and pepper, tomato, iceburg lettuce, caramelized vidalia onion, giant thick slices of avocado, swiss cheese, and ketchup. 

I went grocery shopping this evening and bought a bag of rolos to make a dessert because I SWEAR I saw one on Pinterest but can’t find it and haven’t found it yet. Any suggestions?

Also, my wisdom teeth look good! Barely impacted but still have to get ’em taken out. Still scared about that… I really despise medication and am especially nervous about having to take pain medicine and feeling like I’m “on something,” as ridiculous as that sounds. So I’m crossing my fingers that it’s super easy and I can sail smoothly on Advil or something lightweight 😉 Any essential tips I should know for this?

Me: “Okay, you too!” (ok, crazy lady!)

Dinner is Brunch

How’s that long weekend coming along?!

We had a slow but amazing day. We went shopping at the mall where nothing fit me because every single store did away with their petite section. Despite the way our plus-size nation talks these days, no one’s favoring the size 0, let me tell you. But, that’s a post for another day, I suppose…

At least restaurants don’t discriminate! We came across Boca in South Tampa and I’m so glad we did. It had an elegant style house feel and the food? Oh, the food…
To start, we got a spinach salad drizzled with warm apple smoked bacon vinaigrette and a baked goat cheese medallion (the best part!). And we also split the tomato gaspacho. Really great. Everything is organic, local and amazingly well-priced! I also got a glass of fresh-squeezed blood orange juice. So delicious, I gulped it down in about a minute. No time for being a lady around here! (only had the iPhone for pics!)
And then came the sandwich. Smoked chicken, apple smoked bacon, manchego, and blueberry preserves on a pretzel bun. Interesting, no? So good! And the fries were amazing – fried in duck fat instead of lard (not sure how much “healthier” that is, but the flavor was excellent) and sprinkled with truffle oil and parmesan. Also, the ketchup was spiced with something which was supposed to taste “spiked” but instead tasted like Sprite! haha, not what they were going for but we liked it! 🙂
Then we came home and took a siesta. All that smoked meat will wear a person out! 😉

Rain Shower [GIVEAWAY!]

It’s a gorgeous night here! I love when it’s still daylight and we’re huddled on the couch while a light thunderstorm rumbles outside. I’ve been busy plucking away at my keyboard writing articles for MindBodyGreen (they’ll be going up starting tomorrow so be on the look out!)…
  so it seemed like a good day for Dominos to do the cooking.
I always get the thin crust with provolone, green peppers, roasted red peppers, and onions. Yummy! But you have to be careful with this one because that thin crust is deceiving – you can just keep eating and eating and eating because it’s really pretty light! Love the garlicky bread, too…

Cheese, please!

Any food item that makes me go, “Oooo, that’s interesting!” is pretty much destined to end up in my cart. And this is why Whole Foods is such a very dangerous black hole for me to end up in…

We picked up some goat gouda yesterday, too. Out. Of. This. World. So creamy, and a much milder goat flavor than the chevre you’ve probably had before. You know, the kind that comes in a log that’s super soft and super… goaty? Yeah, this one is smooth but firm and doesn’t taste anything like a farm animal. 🙂
And water with lemon which I can’t seem to get enough of. Lemons, that is… I could bite into a lemon like an apple lately! What’s that about?
And a little bonus! Look what Adrien found! Too bad I don’t live in California… what don’t they have?!
